Healthy Recipes - Contest Entry 02 - Fenugreek gravy (Venthaya kuzhambu) - Renjitham
Ingredients:
Fenugreek seeds / Venthayam - 50 grams
Grated coconut - 4 spoon
Cumin seeds (Jeeragam) - 1/4 spoon
Turmeric powder - 1/4 spoon
Red chilli powder - 1 spoon
Corriander powder - 2 spoon
Onion - 1
Tomato - 1
Tamarind - Marble size
Salt - To taste
Oil - 1 spoon
Mustard seeds - 1/4 spoon
Preparation
- Cut Onion and Tomato into small pieces and keep it aside
- Soak tamarind in 1/4 cup of water for a few minutes and filter it.
- Blend coconut and cumin seeds in blender / mixie
- Add Chilli powder and corriander powder to the blended paste and mix it.
- Heat a pan and fry Fenu greek for a few minutes (You can add oil, if you prefer)
- Now pulse the fried fenugreek one or two times in mixie / blender, to break the it into very small chunks.
- In a pan, heat oil and then add mustard seeds and curry leaves.
- Add cut onion pieces and caramelize them.
- After onion changes color, add the cut tomato pieces.
- Add the fenugreek chunks and mix it well.
- Now add the blended paste, salt and tamarind water.
- If required add more water.
- Allow it to boil and remove it from the furnace when it reaches curry consistency (kuzhambu patham)
