Chillzee Recipes -Thinai Paniyaaram

Ingredients

1 cup samai - (little millet)

1 cup thinai arisi (Foxtail millet)

1/2 cup urud dal

1 spoon fenugreek seeds

1/4 cup grated coconut

2 tbsp onion (finely chopped)

2 tbsp cabbage (finely chopped)

2 tbsp capsicum (finely chopped)

1/2 tspn ginger (skin peeled and finely chopped)

1 tsp green chillie ( finely chopped)

Few curry leaves (finely chopped)

Few coriander leaves (FInely chopped)

For seasoning

1 tsp mustard seeds

1 tsp chana dal

1 tsp split urud dal

A pinch of asafetida

Method

1) Soak all the ingredients except veggies and salt for 2/3 hours

2) Grind it to idly batter consistency. This batter should not be smooth one. When you press a pinch of batter you should be able to see fine rava particles,

3) Add salt to the batter and mix it well and let it ferment overnight

4) Add the veggies and grated coconut to the batter and mix well

5) Season to ingredients and add to the batter and mix well

6) Heat the kuzhi paniyaaram pan and add oil to all the kuzhis

7) Pour the batter to each of the kuzhis and allow it to cook.

Crispy kuzhi paniyaaram is ready.
