Chillzee Recipes - Mutton Gravy (Varuthu araithathu) - Nanthini

Ingredients

For making the paste:

Coriander seeds (thaniya) - 2 big spoon

Red chilies’ - 12

Grated Coconut - 4 big spoon

Fennel seeds (Sombu) - 2 tsp

Cloves (krambu) - 2

Cinnamon (pattai) - 1 small pc

Poppy seeds (kasakasa) - 1 tsp

 

For gravy:

Mutton - .5 kg

Cinnamon (pattai) - 1 small pc

Cloves (krambu) - 3

Cardamom (elakkai) - 1

Garlic - 6 cloves

Ginger (inji) - half finger size

Onion - 1 or Pearl onion (Chinna vengayam) - 10

Tomato - 1

Lemon juice - 2 - 4 drops

Curry leaves (karuveppilai), Coriander leaves (kothamali) - Little

Turmeric powder - small pinch

Salt - to taste

Oil - as Required

 

Cooking Instructions 

Paste Preparation:

  1. Add little oil to a pan.
  2. When the pan becomes hot, reduce the flame to sim.
  3. Add coriander seeds and fry till it changes color.
  4. Keep is aside in a plate.
  5. Now add few more drops of oil and then add red chilies.
  6. Fry the chilies and when they start turning color, remove it from the flame and keep it along with Coriander seeds.
  7. Add few more drops of oil and then add grated coconut.
  8. Fry the coconut till it starts to change in color.
  9. Now add fennel seeds, Cloves, Cinnamon and Poppy seeds to coconut.
  10. Continue to fry the mix till coconut turns color.
  11. Keep it along with Coriander seeds and chilies.
  12. Let the contents cool and then grind them into a fine paste in a mixie or blender.
  13. Add water as required.

 

Gravy preparation:     

  1. Crush Garlic cloves and Ginger piece and keep it ready
  2. Slightly crush, Cinnamon, Cardamom and cloves and keep it ready.
  3. Cut onion and tomato into small pieces.
  4. Keep cooker in medium flame.
  5. When it becomes hot, add required oil and allow it get hot.
  6. Add Cinnamon, Cardamom and cloves.
  7. When they splutter, add ginger and garlic cloves
  8. After sautéing for a while, add Curry leaves and Coriander leaves.
  9. Now add onion pieces and sauté well.
  10. When onion changes color, add tomato pieces and sauté.
  11. Once tomato gets cooked, add mutton pieces and mix well.
  12. Add pinch of turmeric powder and lemon juice
  13. Also add required salt, mix well and let it cook for 2-3 mins
  14. Now add the prepared paste to mutton.
  15. Add required water for cooking.
  16. Close the cooker and let it cook.
  17. Usually 3 whistles + 10 minutes in sim should do.
  18. After the pressure goes, down open the Pressure cooker, mix the gravy well. Check salt and add if required.
  19. Garnish with coriander leaves and serve hot with rice, chapatti, naan or roti.
